This is the principle that Klasik Beans (the producer & processor) holds in every post-harvest process in almost all the highlands of coffee production in Indonesia. They believe that the complexity of post-harvest processing should always be based on a deep understanding and observation of the environment. West Java is proof that by being in harmony with the environment, a unique taste/character of coffee can be created.
